  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 2 cups zucchini, washed, unpeeled and grated
  • 1/2 cup chocolate chips, optional – dairy-free or unsweetened

Instructions

  1. Pit dates if needed and place them in a bowl with the nondairy milk and vanilla extract. Ensure the dates are fully covered with the liquid. Set aside to soak for 15 minutes.
  2. Using a food processor or a high-speed blender, grind the old-fashioned oats and dry millet into a flour-like consistency for about 40 seconds. Don’t worry if the millet doesn’t completely break down; a slightly coarser texture is desired.
  3. Transfer the ground oat and millet mixture to a medium-sized mixing bowl. Add the cinnamon, baking powder, baking soda, ginger, and nutmeg. Mix these dry ingredients thoroughly until well combined.
  4. Place the soaked dates and nondairy milk mixture into a food processor or blender and blend until completely smooth. This creates the natural sweetener and binder for the muffins.
  5. Pour the liquid date mixture into the dry ingredient mixture and mix well with a spatula or spoon until just combined. Be careful not to overmix.
  6. Gently fold in the grated zucchini. If you are using them, also add the chocolate chips or nuts at this stage.
  7. Spoon the batter evenly into a muffin pan lined with paper or silicone cups. Fill each muffin cup almost to the top, as this mixture will not rise significantly. For smaller muffins, fill each cup about three-quarters full.
