Christmas Cookie Tree

A Christmas Cookie tree can be made using a sugar or gingerbread recipe. I used the Roll-Out Cookie Dough Recipe that came with the Tree Cookie cutter Kit.

To create the tree, double this recipe.

Ingredients

  • 1 cup
    butter
  • 1 cup
    sugar
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 teaspoon
    vanilla
  • 3 cups
    flour
  • green food coloring enough to make batter green

Instructions

  • Preheat oven to 400 degrees Fahrenheit (200°C).

    In a large bowl, cream together butter and sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together baking powder and flour. Gradually add the dry ingredients to the wet ingredients, one cup at a time, mixing after each addition. The dough will become very stiff; you may need to blend the last portion of flour by hand. If the dough becomes too stiff and doesn’t hold together, add water a teaspoon at a time until a workable consistency is achieved. Do not chill the dough.

    Working with one portion of cookie dough at a time, roll it out on a lightly floured surface to approximately 1/4 inch thick. Use your star-shaped cookie cutters to cut out various sizes of stars.

    Place the cut-out stars on an ungreased cookie sheet. Bake on the middle rack of your oven: small and medium-sized stars will typically take 6-7 minutes, while larger stars may require 10-15 minutes, or until the edges are lightly golden brown. Immediately remove the baked cookies from the sheet and transfer them to wire racks to cool completely.

    To Make Royal Icing:

    It is crucial that your mixing bowl and all utensils are completely grease-free, as even a trace of grease can cause royal icing to break down. Royal icing dries very quickly, so keep your bowl covered with a damp cloth at all times when not in use.

    Ingredients for Royal Icing:

    3 level tablespoons Wilton Meringue Powder

    4 cups sifted confectioner’s sugar

    6 tablespoons water*

    Beat all ingredients at low speed for 7-10 minutes (or 10-12 minutes at high speed with a portable mixer) until the icing forms stiff peaks. This icing can be stored in an airtight container and re-whipped before each use. This recipe yields about 3 cups of icing.

    *For a stiffer icing, especially when using a heavy-duty stand mixer, reduce the water by 1 tablespoon.

    How to Assemble the Tree:

    You will need two of each star size to construct a sturdy tree.

    Transfer your royal icing to a piping bag. Begin assembling your cookies, stacking them from largest to smallest, on a doily-covered cake stand or serving platter. Apply a small dab or two of icing between each cookie layer as you stack them to act as an adhesive.

    Once stacked, place a small dot of icing on each tip of the stars and affix one red M&M candy (or similar small candy) to each. Allow the icing to dry completely before proceeding.

    For the crowning top star, place one small star on a wire rack. Thin down some royal icing with a few drops of water until it’s a pouring consistency, then carefully pour it over the star, ensuring even coverage. Let it dry completely. Once dry, use a dollop of royal icing to attach this decorative star to the very top of your cookie tree.

    For a “snowy” effect, lightly sift confectioner’s sugar over the entire assembled cookie tree.
