It’s guaranteed to be a massive hit with everyone, from the youngest family members to the most discerning adult palates. Festive star-shaped popcorn cake adorned with M&M's, perfect for holiday gatherings and edible gifts.

This versatile dessert has graced our family gatherings for years, often making an appearance during Easter with its charming pastel M&M candies, molded into delightful spring-themed nests. The joy and enthusiasm it brings have always been immense, which inspired a festive adaptation for the Christmas season. This year, we decided to elevate the holiday spirit by incorporating vibrant red and green M&M’s and using a cheerful star-shaped cookie cutter to create individual, eye-catching treats instead of the traditional squares.

Why Popcorn Cake is Your New Favorite Holiday Dessert

In the whirlwind of holiday preparations, finding time for elaborate baking can be a challenge. That’s where this no-bake popcorn cake truly shines. If you’ve ever whipped up a batch of classic Rice Krispies Treats, you’ll find the process remarkably similar – and just as simple! The main difference? We swap the crispy rice cereal for fluffy, popped popcorn, creating a wonderfully light and chewy texture that’s utterly irresistible. The beauty of this recipe lies in its simplicity and speed, allowing you to create a show-stopping dessert without ever turning on your oven. This means less stress in the kitchen and more time enjoying the festivities with your loved ones.

Hand pressing mixed popcorn, marshmallows, peanuts, and red and green M&M's into a baking tray, creating a festive holiday treat base.

The entire creation process is a breeze: once the simple binding mixture is prepared and stirred together with the popcorn, you just press it into a baking pan and allow it to cool. There’s no precise baking time to worry about, no delicate doughs to handle, and no risk of burning. It’s a foolproof recipe perfect for beginner bakers or seasoned dessert makers looking for a quick and impressive option.

Crafting Festive Star-Shaped Treats

Once your popcorn cake mixture has cooled and set, the real fun begins: shaping! While simple squares are always an option, embracing the holiday spirit with themed shapes truly makes these treats special. Instead of merely cutting them into basic squares, we opted for a charming star cookie cutter. This simple step instantly transforms your popcorn cake into delightful, festive morsels perfect for any holiday celebration.

One common characteristic of popcorn cake, much like its Rice Krispies Treat cousin, is its delightful stickiness. When cutting and removing the shapes from the pan, don’t hesitate to use a fork or spatula to assist. A light coating of non-stick spray on your cutter or utensils can also work wonders in ensuring clean, perfect shapes every time. This minor detail ensures that each star maintains its crisp edges and appealing form.

Presentation and Gifting Made Easy

Once cut, arrange your beautiful popcorn cake stars on a festive serving platter for all to admire and enjoy. For those planning to layer these delicious treats in a container or cookie tin, a simple trick ensures they don’t stick together: place a piece of waxed paper or parchment paper between each layer. This keeps them fresh and prevents any messy mishaps when serving. If you’re looking to turn these delightful stars into thoughtful edible gifts, explore creative wrapping ideas to add that extra special touch. Imagine a beautifully wrapped tin filled with these homemade popcorn cake stars – a gift that truly comes from the heart and is sure to be appreciated by friends, family, and neighbors alike.

Ingredients

  • 25 cups popped popcorn – 20 to 25 cups or use store bought bag of popped popcorn – see photo in steps below
  • 1-1/2 cups salted peanuts
  • 1- 1/2 cups M & M candies in holiday colors
  • 1 stick margarine or butter
  • 1/2 cup vegetable oil
  • 16 ounces mini marshmallows

Instructions

  • Mix together in a large bowl: popped popcorn, peanuts and M & M’s. Set aside.
  • Mix together and boil for 2 minutes: margarine or butter, vegetable oil and mini-marshmallows until melted. Stir constantly so mixture doesn’t burn.
  • Pour melted mixture over popcorn mix and mix well, making sure M&M’s are mixed evenly throughout mix.
  • While mixture is still warm make one of these variations:

If making into balls: Rub vegetable oil over hands before forming popcorn cake mixture into any shape so the mixture will not stick to your hands.

    – Shape into balls and place in cupcake liners.

    – Shape into balls and then on a sheet of wax paper, flatten with palm of hand to make lollipops – push a lollipop stick into each, let cool.

    – Press into baking pan and cut as you would cut a brownie.

  • When taking them on a plate or container, use wax paper in-between the layers to lessen each cut piece of the popcorn cake from sticking to the others.
  • Using a spatula, press mixture into a large baking pan and let cool. Once cool, press a star cookie cutter down into the mix. Then using a fork, pull the shape out and place on plate.
  • Repeat process until you have cut as many as you can from the pan. For the leftover popcorn mix in the pan, use your hands to form into balls as described below.
  • Enjoy.

I fill a large mixing bowl with popcorn. It is about 25 cups. The amount doesn’t have to be precise. A little more popcorn will be a less gooey mix. I have made it with more and less and it always gets eaten.

How to Make Popcorn Cake: A Visual Step-By-Step Guide

Let’s walk through the creation process with detailed steps and accompanying visuals to ensure your popcorn cake turns out perfectly every time. Precision and proper mixing are key to achieving that ideal chewy-yet-firm texture.

Popcorn cake recipe ingredients laid out on a clean kitchen counter, including marshmallows, butter, vegetable oil, popcorn, peanuts, and M&M's.
  1. In a sturdy pot, combine the mini marshmallows, margarine (or butter), and vegetable oil. Place the pot over medium heat and stir continuously until all ingredients are fully melted and smoothly incorporated. This gentle heat and constant stirring prevent the marshmallows from sticking to the bottom and burning, which can affect the flavor.

2. Once melted and smooth, allow the mixture to come to a gentle boil for exactly 2 minutes. This brief boiling period helps to create the perfect sticky consistency that will bind your popcorn cake together, ensuring it holds its shape beautifully once cooled. Keep stirring during this stage to prevent scorching.

3. In a very large mixing bowl, combine your freshly popped popcorn, salted peanuts, and your festive M&M’s. Ensure the popcorn is completely cooled to prevent the candies from melting prematurely. Give them a good toss to distribute the peanuts and candies evenly throughout the popcorn.

4. Once the marshmallow mixture is perfectly melted and has boiled for the specified time, carefully pour it over the popcorn, peanut, and M&M mixture in the large bowl.

Using a sturdy spatula, mix thoroughly until every piece of popcorn and every M&M is coated with the sweet marshmallow binder. Work quickly but carefully while the mixture is still warm and pliable.

5. To prevent the sticky mixture from adhering to your hands, lightly rub them with vegetable oil before you begin shaping. This simple trick makes forming the popcorn cake a much cleaner and easier process. You can either press the entire mixture into a greased baking pan for cutting later, or for individual servings, shape it into balls, roughly the size of a tennis ball. Place these shaped portions onto foil, wax paper, or parchment paper to cool completely.

6. For a charming and easy-to-handle presentation, place each popcorn cake ball into a decorative cupcake liner. This not only adds a touch of elegance but also makes them perfect for grab-and-go treats at parties or bake sales. Once cooled and set, your popcorn cakes are ready to be enjoyed!

Pro Tips for the Best Popcorn Cake

  • **Fresh Popcorn is Key:** While pre-popped popcorn can be used for convenience, freshly popped kernels offer the best texture and flavor. Ensure it’s fully cooled before mixing to prevent premature melting of candies.
  • **Don’t Overcook Marshmallows:** Boiling for exactly 2 minutes is crucial. Over-boiling can make the mixture too hard, while under-boiling might leave it too soft and sticky.
  • **Grease Everything:** From your mixing bowl (if you’re using a plastic one for mixing the dry ingredients) to your hands, spatula, and cookie cutters, a light coating of vegetable oil or non-stick spray is your best friend against stickiness.
  • **Mix Quickly:** The marshmallow mixture will start to set as it cools, so incorporate it into the popcorn mixture swiftly and thoroughly.
  • **Press Firmly:** When pressing the mixture into the pan, apply even and firm pressure with a greased spatula or your hands. This ensures a compact cake that won’t crumble when cut.
  • **Storage:** Store popcorn cake in an airtight container at room temperature for up to 3-4 days to maintain its freshness and chewy texture. Separation with wax paper is vital if stacking.
